Expert Sleepers • Sending all 12 inputs from ES-8/7/6 to an audio interface optical input?

I have an ES-8 with the ES-6 and ES-7 expanders, giving me 12 inputs for recording to my computer.

I am looking to upgrade my computer audio interface, potentially to something like the MOTO UltraLite mk5. That has 8-channel optical IO, so I think I can connect the ES-8 optical out to the UltraLite, but I can only access the first 8 of the 12 channels when routing the signal that way, is that correct?

I want something like the UltraLite because I want to record multiple non-modular hardware synths via the line level inputs at the same time I am multi-track recording my modular rig with my ES hardware. I explain more about this here https://www.modwiggler.com/forum/viewtopic.php?t=290485

I'm trying to figure out if I can continue making full use of the 12 inputs from the ES hardware. I guess I would need to find an audio interface that has 16 channel optical I/O, but this seems to be very uncommon (and probably expensive), if it even exists. Plus, I don't think my ES-8/7/6 combo would even support it anyway? Alternately, I guess I would have to make an aggregate audio interface and use both the ES and MOTU hardware at the same time, but the big limitation there is it will only work on macOS and not Windows. Is that correct?
